Summary:This article presents the steps that constitute a research project in Urban Archaeology, which resulted in the excavation of a small fraction of the old Matarazzo group industrial complex, in the Água Branca neighborhood of the city of São Paulo. Well-preserved structures were encountered beneath a former parking lot, and these identified the production of one of the first margarine factories in the country, produced between the 1940s and 1970s. During the industrial boom in the city, the production of “vegetable fat” formed part of the modernization plans that transformed food, the production of industrialized goods and the introduction of new consumption habits, by means of the mechanisms for deploying elitist plans in São Paulo.
