Summary:This article analyzed institutional strategies with the purpose of civilize poor farmers of Mexico. It examines how the State and food industries have colonized the diet of low-income populations by means of institutional and moral rearrangement of their practices related to health and food. Additionally, looks at the nutrition science legitimization of therapeutic policies to promote a universalization of a western consumption pattern. All the same, the domination of low-income classes’ diet is possible because their members cannot meet to the consumption patterns imposed by organisms of certification.
