| Summary: | The article starts from current criticisms of the appellations d’origine contrôlée, the most recognized designation of origin in France, to explore contemporary strategies for valuing French cheeses, highlighting the argument that considers the Salers cattle breed as an attribute of authenticity and typicity. In this way, two case studies illustrate how the breed is maintained as a claim of the product’s connection to its terroir. The study also shows that the appreciation of the Salers goes beyond rural properties, involving institutional support and a narrative that exalts tradition, passion, and family succession as sources of prestige. |
