| Summary: | This article analyzes the commoditization and the consumptionof traditional food among Mexican migrants from the southern state of Oaxaca settled in Los Angeles, CA. The incursion of Oaxacan women in the informal commercialization as a way of self employment is explored at fi rst. Further it is analyzed the relationship of this phenomena with the opening of Oaxacan restaurants at that city. It is proposed that in order to work these kind of market it is required the conformation of transnational chains of distribution, and the construction of different discourses related with “authenticity” and “quality” of the food commercialized. |
