| Summary: | This paper underlines the conflicts between health and sanitation policies and the recent policies to safeguard immaterial cultural heritage promoted by Iphan (National Institute of Historic Heritage). This institute promote the immaterial cultural heritage policies placing food as an important cultural reference. The contradictions between these two policies are observed comparing the sanitation requirements of food production to the traditional production practices and commercialization of artisanal food. The focus is on artisanal cheese and cassava flour cases. |
